Marinated BBQ Merino Lamb Ribs

Ingredients

1 x quantity of lamb ribs
- Zest and juice of 2 lemons
- 4 cloves crushed garlic
- 3 Tbsp tomato sauce
- 2 sticks fresh rosemary chopped
- 1 tsp ground cumin
- Mint leaves chopped
- Fresh thyme chopped
- 1 Tbsp smoked paprika
- 2 Tbsp honey
- 3 Tbsp cooking oil (canola or soy bean something neutral in flavour)
- optional add some chilli paste to the marinade to spice them up a wee bit
Marinade
Directions
- Combine all the ingredients for the marinade and mix well
- Score the ribs on the fat side with a criss cross pattern with a sharp knife
- Rub the marinade all over and allow to marinade for 3 hours min or overnight in the fridge
- Remove the ribs from the fridge for about 30 min before cooking
- Pre heat BBQ to a medium to high temp around the 160 deg C
- Season the ribs with salt and pepper add the ribs to the BBQ in a non-stick roasting pan or tray cook for 1 hour turning them every 15 min, when you turn them baste the ribs with the marinade and juices in the roasting dish, once tender then remove the dish and rest
- Heat the BBQ to a high heat and sear the ribs on the grill to caramelize if they aren’t already coloured in the BBQ, cut into portions, sprinkle with chopped Coriander and serve with your favourite dipping sauce or a Harissa mayo.
