Like other cuts at Middlehurst this is fantastic quality Merino, which is prime meat and different to supermarket cuts by a long shot. And the back strap, of course, is a cut above the rest.

Lamb and roja sauce

Fast and tasty

Of all the beautiful Middlehurst lamb cuts, this is one of the very best, fast cooked, cuts. It takes minutes to prepare and just oozes flavour. Hard to find sometimes but well worth waiting for.
